Sweet Dough Cinnamon Rolls

So I've been trying a lot of cinnamon roll recipes lately. This recipe was given to me through the grapevine and now it's my new fav for sure!!



Note: This recipe makes 12 large cinnamon rolls that fit on a sheet pan (see picture above) if you want smaller cinnamon rolls that fit in two 9x13’s just cut the rolls 1 inch thickness instead of 1.5 inches.

Sweet Dough Cinnamon Rolls


Sweet Dough

2 cups scalded milk

1/2 cup granulated sugar

2 Tbsp yeast

1 cup warm water

1 Tbsp salt

3/4 cup Crisco Vegetable Shortening

1 egg beaten

7-8 cups of flour


Filling

6 Tbsp softened butter or margarine

1 cup brown sugar

2 heaping Tbsp cinnamon


Cream Cheese Frosting

4 oz Cream Cheese, softened

1/4 cup Salted Butter, softened

1 tsp Vanilla

1 Tbsp Maple Syrup

Pinch of Salt

2 cups Powdered Sugar

1-2 Tbsp Milk for desired consistency


Sweet Dough & Filling Instructions

  1. Put 2 cups of milk (I use 1%) into a small saucepan. Bring to a boil on medium heat, stirring constantly until the milk is just scalded. Set aside to cool (I put mine in the fridge for about 10 minutes and once you can dip your finger in and it's lukewarm to the touch it's good to go!)

  2. In a tall cup, combine the yeast, sugar, and warm water together and let rise. It should foam and about double in size.

  3. In the bowl of a stand mixer, add the shortening, salt and slightly cooled scalded milk and mix to combine.

  4. Add the yeast mixture to the milk mixture and stir to combine. Then add the beaten egg.

  5. Add 4 cups of flour and combine using the dough hook on low speed. Continue adding flour slowly until the dough begins to pull away from the sides of the bowl.

  6. Transfer the dough to a large lightly greased bowl and cover with greased plastic wrap.

  7. Let rise until double (about 45-60 mins)

  8. Roll out on a lightly greased surface until about 20 inches in width. (25ish inches in width if making 24 small rolls, cut off ends if needed.)

  9. Spread softened butter on the rolled out dough to the edges.

  10. Mix together cinnamon and brown sugar and sprinkle over the butter.

  11. Roll up from the 20 inch end and cut the rolls into 1.5 inch sections. (1 inch for smaller rolls)

  12. Place 6 rolls each in two greased 9x13 pans.

  13. Let rise for 30-60 mins

  14. Preheat oven to 375 degrees and bake for 20-25 minutes until golden brown.


Frosting Instructions

  1. With hand mixer, whip cream cheese and butter together

  2. Add vanilla, syrup, and salt and mix

  3. Gradually add in the powdered sugar

  4. Add in milk if it is too thick

  5. Spread over cooled cinnamon rolls
