I wasn't going to post with recipe (unsure why) but I've made these quite a bit lately and people have been asking for the recipe. Mason does not like the peanut butter chocolate combo normally. But one night I came home from work and he was lying on the couch looking sick. I asked him what was wrong and he said he couldn't resist and he had eaten 4 of these cupcakes! Honestly this frosting is like eating a cloud. It is SO fluffy and light. Which is so weird because peanut butter is so heavy. SO excited to share this one with you guys. It seriously is delicious.
Peanut Butter Chocolate Cupcakes
Deep, Dark Chocolate Cake
1. First, make this Deep, Dark Chocolate Cake linked here https://fairbakes.wixsite.com/fairbakes/post/deep-dark-chocolate-cake
2. Let the cake cool completely. If making cupcakes use a 1/4 measuring cup and scoop into lined cupcake tin. (Should make about 24 cupcakes). Bake at 350 degrees for 13-15 minutes.
3. While cupcakes are cooling, make the Peanut Butter Frosting.
Peanut Butter Frosting
1 cup unsalted butter, softened to room temperature
3/4 cup peanut butter (I use JIF or Skippy depending on what I have)
3-3 1/2 cups powdered sugar
1/4 teaspoon salt
1 teaspoon vanilla
2-4 Tablespoons heavy whipping cream or half and half
1 bar unsweetened chocolate for decor (you will only use a sliver of this)
Cream butter until fluffy, about 2 minutes.
Add peanut butter and cream until fluffy, about 2 minutes
Add in 2 cups of powdered sugar, vanilla, and salt and slowly mix together. Once mixed, beat on high for about one minute to incorporate air into the frosting. At this point the frosting will probably seem too thick.
Add 1-2 tbsp of cream and alternate with 1/2 cup powdered sugar until desired consistency is reached.
Place into piping bag fitted with tip and pipe onto cupcakes.
Shave chocolate pieces on top if desired.
