For the longest time we would go to Olive Garden pretty much just to get the Zuppa because we love it so much. So I decided to learn how to make it so that we don't have to spend $40 for soup every time we get a craving.
The trick to a well flavored soup is my good friend Better Than Bouillon— it gives so much flavor without all of the salt!! Picture included below for reference. I also use Knorr Chicken Bouillon for more flavoring but this one is the best.
Copycat Zuppa Toscana
8 oz package Italian Sausage
1/2 cup finely chopped onion
2 Tbsp minced garlic
4 cups thinly-sliced red potatoes
4 cups chopped kale (about 3 full leaves)
1 cup half and half
Pinch of red pepper flakes
Salt and Pepper to taste
Handful of bacon bits
Homemade Chicken Broth:
7 cups water
2 Tbsp Chicken Bouillon (Knorr brand)
3 Tbsp Better Than Bouillon
Brown ground sausage in a pan and set aside.
If making fresh bacon bits, fry up the bacon and set aside to cool. Then chop into bacon bits.
In a large Dutch oven or pot, add a little oil and the chopped onions. Cook for about 3 minutes on medium heat until softened, then add the garlic and cook.
Add the homemade chicken broth ingredients to the large Dutch oven or pot and mix together.
Add in the sliced red potatoes and bring to a boil over high heat until the potatoes are tender.
Add in chopped kale, half and half, and sausage and boil until the kale begins to wilt.
Add in red pepper flakes, bacon bits, and salt and pepper to taste. If needed add more bullion to add flavor.
Serve warm with sourdough! :)
